For the production of the balsamic fruit vinegars, the tomato pulp is fermented like a wine, macerated and aged. This product should be shaken before use
Protea Hill Farm is situated in the heart of the Stellenbosch winelands and produces natural balsamic Fruit, Herb, Seed and Flower Blossom Vinegars.
The farm produces fresh fruit for the use of a variety of award winning balsamic vinegars. All fruits are naturally farmed, that means no insecticides or pesticides are used on the plants or fruit.
The fruits are sun ripened, harvested in a 100% ripe condition, therefore the sugar content is very high and the taste is sweet. No chemical additives, flavour enhancers, colourants, molasses or caramelized sugars have been used in the production of these balsamic vinegars.
All balsamic vinegars have 6% acidity and are aged in vats for years. 'EAT IN'- award winners "Best New Product of SA" 2006 & 2007 with the Balsamic Raspberry- and 8 Balsamic Herb Vinegars.
The colour of the vinegar reflects the individual fruit/herb and becomes darker while still aging in the bottle. All vinegars are hand-filtered, not mechanically to ensure a maximum in flavour and aroma, Minor sedimentation on the bottom of the bottle is absolutely normal.
